2 T. butter
2 large shallot-diced
2 cups small diced potatoes
4 ounces smoked salmon –break into small pieces
12 eggs – whisked together in bowl
5 ounces cream cheese – softened
4 -6 chive stems – diced
1 t. kosher salt
1 t. pepper
Melt butter in large sauté pan. Sauté diced potatoes until tender. Add diced shallots and cook until tender. Turn heat down to medium and add whisked eggs. Gently pull eggs toward center of pan from the edge and add smoked salmon & chives. Stir until cream cheese is fully melted, and add seasoning. *Cook only until eggs are cooked and soft, but not dry.
