Better Than Grandma’s Popovers

Serves about 12 popovers


My grandmother was a topnotch baker, and I thought she had the best popover recipe until this one!



Preheat oven at 400°.


With either nonstick spray or melted clarified butter, coat the interior of large muffin or popover tins and place in the oven to preheat for 10-12 minutes. While heating, mix the following:


6 eggs

Mix until frothy.


Add:

1 3/ 4 c. milk

6 T. melted butter


Mix and add:

1 3/ 4 c. flour

3/4 t. kosher salt


Mix until well combined and divide batter evenly into muffin/popover pans until 2/ 3 full. Bake 35 minutes or until popover tops are browned. A serving suggestion is to serve with whipped honey cinnamon butter.
